Hummingbird Recipe
Peach Salsa!
With peaches and tomatoes ripening, sweet and delicious, this is a favorite summertime salsa.
4 large peaches
4 vine tomatoes
1 red or yellow bell pepper
2 jalapeno peppers
½ red onion
½ bunch of cilantro
1 lime
Sea salt and pepper
Finely dice peaches, tomatoes, bell pepper, jalapeno (remove seeds for less heat), ½ red onion and gently mix in a large serving bowl.
Chop cilantro and add to the bowl (if you like cilantro, use the whole bunch or omit it altogether if you’re not a fan). Squeeze the lime over the top of the mixture and add sea salt and pepper to taste. Mix gently and well.
Serve with chips or over grilled pork chops or fish.

Grilled Cumin & Coriander Rubbed Pork Chops with Peach Salsa
This is sooooooo good!
Rub 1 inch thick pork chops with sea salt, pepper, cumin, coriander, and smoked paprika. Refrigerate for several hours if possible. Rubbing them in the a.m. for grilling in the evening works out perfectly.
Grill outdoors if possible. Spoon Peach Salsa generously over each chop and serve.
