Embrace the Pleasures of Garlic!

The Fall is the time of year to celebrate all-things-garlic and over the past two weekends, Long Island had its on-going Garlic Festivals.

Around this time several years ago, I had my first and only experience harvesting local garlic. This occurred while I was volunteering at Early Girl Farm at the former Moriches location. Edwin and I drove out into the field riding a well-worn golf cart, then walked the rows to grab any tall stalks that were "fallen over." This indicated that the garlic was ready to harvest. After we piled the cart high with our haul, we brought the bulbs into a well vented greenhouse to be placed on top of long racks covered with metal screening for aeration. Here, the garlic was to season for three weeks before it could be sold.

I'll always remember the aroma of that greenhouse; sweet, earthy and so pungent and to this day, for me, roasted garlic inspires one of the top quintessential scents and flavors of the Fall.
